Peppers

As the weather begins to heat up, the peppers are coming in.  In the photo below the green bean is the "Spicy Jane."  I bought this plant because my best friend's name is Jane.  I wanted to have "Jane" in my garden.  


Below that is a Korean hot pepper.  


At the bottom of the photo is the Shishito pepper.

Squash

I love running my squash though the vegetable spiralizer.  Microware it to partially cook it and then top it with a ground meat sauce.  Makes for a great no carbohydrate meal. 

Apricots

After having the tree for four years, my apricot tree has finally given me a decent harvest!  And I got to them before the birds did!  I had ordered this tree bare root and didn't think it would survive this climate.  I was wrong.

Processing the apricots in preparation for canning.

Only using apricots, sugar, and lemon juice for this recipe.

The final canned product.  I ended up with a total of four cans.  Shelf stable so that we can eat on this all year long.
